May we suggest that you keep up with the Mauritian beach
culture, where you make your own barbecue by the sea, under
the sun and on the sand!
There is absolutely nothing more exotic than to look after
your grill, while sipping our local rhum and dancing to
the rhythm of the sega (our folk dance)... while cooking!
For a very juicy grill, lamb, we marinate beef and pork
in red wine; chicken in white wine, honey and soy sauce,
garlic and herbs. And seafood are usually marinated in wine
or rhum, soy sauce, fish sauce, ginger, thyme, parsley,
salt and pepper.
Because we are big on taste, meat, fish and seafood are
marinated, at least 2 days beforehand!
